PANCIT PALABOK RECIPE 

PANCIT PALABOK is one of my favorite dish as a Filipino. I love how colorful pancit palabok is, I love the shrimp sauce and toppings on it like chopped green onions, fried garlic, cut wedges of hard-boiled eggs,chicharon,tofu,prawns,and tinapa flakes. Certified mouthful and yummy merienda for all except if you have some allergies on it's ingredients. 
PANCIT PALABOK INGREDIENTS
  1. 2 pack (2 lb) rice sticks (bihon)
FOR SAUCE:
  1. 4 tbsp olive oil
  1. 1 lb ground pork
  1. 2 tbsp atsuete or annato powder 
  1. 6 cups pork broth
  1. 3 piece shrimp cube
  1. 2 cups flour
  1. 4 tbsp of patis or fish sauce 
  1. 1 tbsp of groud black pepper 
  1. 4 pieces fried firm tofu (tokwa) sliced in cubes
  1. 1 cup tinapa flakes 
  1. 1 cup of pounded chicharon
  1. 4 hard boiled eggs 
  1. 1 cup cooked shrimps 
  1. 1/2 cup green onion or scallions, finely chopped
  1. 4 tbsp fried garlic
  1. 5-10 pcs of calamansi


FOR TOPPINGS:

COOKING PROCEDURE 

Rice Sticks / Bihon Noodles
1.Place the noodles in a strainer and soak in boiling water until the noodles are cooked. 
2.Drain the noodles and transfer to a serving plate.

SAUCE

1.In a small pan, using the 4 tbsp of olive oil, saute the pork with fish sauce until golden brown. 
2.Dilute the atsuete powder in 6 cups of boiling pork broth, mixed after boiling put the shrimp cubes. Simmer for 3 minutes.

3.Add the flour continuously while stirring. 

4.Add the ground black pepper and fish sauce to taste, simmer until the sauce became thick. 


And finally, pour the palabok sauce on the rice noodles and garnish with all the toppings you want.
Add calamansi to balance the mouthful flavor. Serve hot and Enjoy!
