JIAN DUI - or BUCHI Recipe

JIAN DUI/BUCHI/SESAME BALLS RECIPE 

This is a type of fried Chinese pastry made from glutinous rice flour. The pastry is coated with sesame seeds on the outside and is crisp and chewy. Inside the pastry is a large hollow, caused by the expansion of the dough. The hollow of the pastry is filled with a filling usually consisting of lotus paste, or alternatively sweet black bean paste, or less commonly red bean paste. They are also sometimes referred to as sesame balls. - source wikipedia 

I am not a chinese but I really like the taste of this pastry. There are lot of recipe you can be found on the internet and I tried this for 3 times until I got the perfect shape, texture and taste. If you want to try my recipe, please see below. I added photo for you to see the outcome.

Instructions
  1. In a mixing bowl, combine the glutinous rice flour, rice flour and water then mix well until form like a dough. 
  2. Separate the dough into individual pieces, in my measure 1 1/2 tbsp. 
  3. Roll each individual piece of dough until a round shape is formed. 
  4. Press the center of the dough until and form a hollow spot in the center. 
  5. Scoop the yam using a spoon then fill it in the hollow space (amount is for your choice, just don't overfill).
  6. Seal the dough and roll it once more until the shape is round. 
  7. Place the sesame seeds in a bowl then roll the round dough over it.  (I slightly dumped the round balls in the water, so the sesame seeds will stick). Make sure that the seeds stick on the dough.
  8. Heat the pan and pour-in the cooking oil.
  9. Medium fire only don't overheat the oil it has a tendency that the sesame balls will burst. 
  10. Remove the cooked buchi from the pan and drain excess oil. Let it cool then serve and enjoy!

VEGETARIAN SPRING ROLL 

This vegan Filipino fried spring rolls are great for snack, appetizer, or party food. It's crispy the outside and full of juicy and crunchy vegetables on the inside. Recipe below. ↓

 Ingredients:

  •    1 whole garlic – chopped
  •    1 Onion – chopped
  •    1 cup shredded cabbage
  •    1 cup carrots –thinly sliced
  •    1 cup green beans – thinly sliced
  •    2 cups Mung bean sprout (togue)
  •    ¼ Kg. chicken breast 
  •     spring roll wrapper
  •     Oil,Salt,Pepper

PROCEDURE 
  • Heat oil in a wok with medium low heat.Sauté garlic and onion.
  • Add in the sliced chicken breast. Sauté until light brown or until cook.
  • Mix in the carrots, green beans, cabbage and bean sprout. 
  • Season with salt and pepper. Once cook, set aside.
  • Prepare the spring roll wrapper into single sheet.
  • Put a spoonful of the sautéed vegetable in the middle of a wrapper and rolled it carefully making the vegetable well-sealed inside. Do the same in all the remaining vegetables. Set aside.
  • Fry the wrapped vegetables until the wrappers turn into golden brown. Serve hot with your favorite sauce! Enjoy!

Homemade PORK EMBUTIDO - Filipino Style Meatloaf (not for Muslim)

PORK EMBUTIDO 

It is a Filipino-style meatloaf. Embutido was developed by Filipinos to suit their own taste and liking into some form of meatloaf. You can either baked this or steam. I tried to steam using a foil and here's the recipe.

Ingredients
  • 2 lbs. pork mince (available at spinneys supermarket) 
  • 1pack Tender Juicy hotdog, cut in half lengthwise
  • ½ cup sweet pickle relish
  • 3 raw eggs
  • 2 cups cheddar cheese, grated
  • 1 cup red bell pepper, minced
  • 1 cup green bell pepper, minced
  • 1½ cup raisins
  • 1 cup carrots, minced
  • 1 cup onion, minced
  • salt and pepper to taste
  • 2 cups breadcrumbs (american garden)
Steaming the Embutido
  1. Place the ground pork in a large container.
  2. Add the breadcrumbs then break the raw eggs and add it in. Mix well
  3. Put-in the carrots, bell pepper (red and green), onion, pickle relish, and cheddar cheese. Mix thoroughly
  4. Add the raisins, salt, and pepper then mix well.
  5. Place the meat mixture in an aluminum foil and flatten it.
  6. Put in the sliced hotdog on the middle of the flat meat mixture.
  7. Roll the aluminum foil into a tightly packed log about 1″ to 1.5″ in diameter, sealing on both ends. Repeat with the remaining pork mixture.
  8. Place in a steamer and let cook for 1 hour.
  9. Let it cool and slice into rings. Serve with your favorite catsup or sauces. Enjoy!

Turon - Sweet Banana Roll


 TURON RECIPE

Turon (also called banana lumpia) it is a popular Filipino snack made with saba bananas and jackfruit, wrapped in spring roll and fried.

Recipe.

INGREDIENTS:
  • 4 ripe saba bananas
  • ½ cup brown sugar
  • 1 can of jackfruit
  • spring roll wrappers.
  • oil for frying
For syrup
  • 1 cup brown sugar
  • 1 cup water


Cooking Instructions:

  1. 1. Prepare the lumpia wrappers by peeling them apart.

  2. 2. Peel the saba bananas and cut each into halves lengthwise.

  3. 3.Place the brown sugar into a flat dish and roll the slices of banana completely covering each slice.

  4. 4.Place banana slice to a wrapper. Add strips of jackfruit along the length of the banana. Fold as usual like folding a lumpia.Use water to seal the edge.

  5. 5.Heat the oil and put-in some brown sugar.Wait until the brown sugar floats. Add some of the turon and fry for 4-5 minutes each side or until the wrapper turns golden brown and the extra sugar syrup on wrapper. Drain then on a strainer to remove excess oils and serve while warm. It is good with vanilla ice cream. Enjoy!

Puto Cheese - fluffy and cheesy

Puto is a kind of Filipino snack that is also oftentimes serve to accompany filipino dishes like dinuguan (pork blood stew) or pancit bihon (rice noodle). 

INGREDIENTS

  • 1-1/2 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 3 eggs
  • 3/4 cup evaporated milk
  • 1/2 cup water
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • choice of cheese for toppings (I use normal cheese)

INSTRUCTIONS 
Added cheese on top of  the puto and
 steam for 1 minute to melt the cheese
  1. Prepare lower part of steamer with water and bring to a boil.
  2. In a large bowl, combine flour, sugar and baking powder. Mix well.
  3. Add eggs one at a time and using an electric mixer, beat after each addition. Add milk and beat until smooth. Add water and continue to beat until batter is smooth. Add butter and vanilla extract. Stir until well blended.
  4. Fill molds with batter up to ¾ full. Arrange molds in a single layer on steamer rack and place over steamer. Lower heat to medium and steam puto for about 8 to 10 minutes or until toothpick inserted comes out clean. Turn off heat and top each puto with cheese. Cover for about 1 minute to allow residual heat to melt cheese. Allow puto to slightly cool before removing from molds. I tried putting the cheese also on the batter and steam and it turns out well also, you can do both too. 
  5. Remove from the mold and serve hot.The best way to eat puto is white it is hot! Enjoy! 

Maja Blanca - Filipino Dessert

Maja Blanca As the name suggests, the dessert is of Spanish origin, adapted from the traditional holiday dessert manjar blanco, and is thus related to other similar desserts such as blancmange. The name means "white delicacy".

This is a must try dessert for a corn, cheese and coconut cream lovers. Recipe below. 

Ingredients
  1. 2 14 oz. can coconut milk
  2. 1 14 oz. can condensed milk
  3. 3/4 cup granulated sugar
  4. 1 15 oz. can whole sweet kernel corn
  5. 3/4 cup cornstarch
  6. 3/4 cup evaporated milk

Instructions
  1. Pour the coconut milk in a cooking pot and bring to a boil.
  2. Add condensed milk, sugar, and corn and stir. 
  3. In a bowl, mix together cornstarch and evaporated milk until fully combined.
  4. Pour the mixture into the cooking pot and stir until mixture become thick.  
  5. Pour into a serving tray.
  6. Refrigerate for at least 30 minutes. Serve cold. Enjoy! 


Home cooked Pancit Bihon - Filipino Style

Pancit Bihon Homecook
This Pancit Bihon Recipe uses rice sticks or "bihon" mixed with chicken,squid balls and vegetables with soy sauce dressing. Great snack or even for main course. Recipe below. 

INGREDIENTS
  • 1 tablespoon olive oil
  • 1 pound chicken breast bone-in 
  • 1 pack squid balls 
  • 2 cloves garlic 
  • 1 small onion 
  • 8 ounces pancit bihon noodles
  • 1 1/2 cups mixed veggies such as carrots, cabbage and green beans, cellery
  • salt and pepper to taste
  • lemon wedges
Pancit sauce:
  • 2 cups chicken stock
  • 2 tablespoons 
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar

INSTRUCTIONS
  1. In a wok over medium heat, add oil and chicken, cook until tender. Transfer to a plate and set aside.
  2. Add garlic and onion and cook for 2-3 minutes. Add the cooked chicken and season with a little salt and pepper.
  3. Stir in the veggies and cook for another 3-4 minutes. 
  4. Add all the ingredients for the pancit sauce and bring to a boil.
  5. Add rice noodles and stir until all the noodles are coated with the sauce.(5-7 minutes).
  6. Add more stock if the noodles is too dry after mixing. 
  7. Season with salt and pepper and more soy sauce if necessary. Serve hot with lemon. Enjoy!
