Home cooked Pancit Bihon - Filipino Style

Pancit Bihon Homecook
This Pancit Bihon Recipe uses rice sticks or "bihon" mixed with chicken,squid balls and vegetables with soy sauce dressing. Great snack or even for main course. Recipe below. 

INGREDIENTS
  • 1 tablespoon olive oil
  • 1 pound chicken breast bone-in 
  • 1 pack squid balls 
  • 2 cloves garlic 
  • 1 small onion 
  • 8 ounces pancit bihon noodles
  • 1 1/2 cups mixed veggies such as carrots, cabbage and green beans, cellery
  • salt and pepper to taste
  • lemon wedges
Pancit sauce:
  • 2 cups chicken stock
  • 2 tablespoons 
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar

INSTRUCTIONS
  1. In a wok over medium heat, add oil and chicken, cook until tender. Transfer to a plate and set aside.
  2. Add garlic and onion and cook for 2-3 minutes. Add the cooked chicken and season with a little salt and pepper.
  3. Stir in the veggies and cook for another 3-4 minutes. 
  4. Add all the ingredients for the pancit sauce and bring to a boil.
  5. Add rice noodles and stir until all the noodles are coated with the sauce.(5-7 minutes).
  6. Add more stock if the noodles is too dry after mixing. 
  7. Season with salt and pepper and more soy sauce if necessary. Serve hot with lemon. Enjoy!
