Pancit Bihon Homecook |
INGREDIENTS
- 1 tablespoon olive oil
- 1 pound chicken breast bone-in
- 1 pack squid balls
- 2 cloves garlic
- 1 small onion
- 8 ounces pancit bihon noodles
- 1 1/2 cups mixed veggies such as carrots, cabbage and green beans, cellery
- salt and pepper to taste
- lemon wedges
Pancit sauce:
- 2 cups chicken stock
- 2 tablespoons
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
INSTRUCTIONS
- In a wok over medium heat, add oil and chicken, cook until tender. Transfer to a plate and set aside.
- Add garlic and onion and cook for 2-3 minutes. Add the cooked chicken and season with a little salt and pepper.
- Stir in the veggies and cook for another 3-4 minutes.
- Add all the ingredients for the pancit sauce and bring to a boil.
- Add rice noodles and stir until all the noodles are coated with the sauce.(5-7 minutes).
- Add more stock if the noodles is too dry after mixing.
- Season with salt and pepper and more soy sauce if necessary. Serve hot with lemon. Enjoy!
