Homemade PORK EMBUTIDO - Filipino Style Meatloaf (not for Muslim)

PORK EMBUTIDO 

It is a Filipino-style meatloaf. Embutido was developed by Filipinos to suit their own taste and liking into some form of meatloaf. You can either baked this or steam. I tried to steam using a foil and here's the recipe. 

Rolled Embutido ready to steam 
Ingredients
  • 2 lbs. pork mince (available at spinneys supermarket) 
  • 1pack Tender Juicy hotdog, cut in half lengthwise
  • ½ cup sweet pickle relish
  • 3 raw eggs
  • 2 cups cheddar cheese, grated
  • 1 cup red bell pepper, minced
  • 1 cup green bell pepper, minced
  • 1½ cup raisins
  • 1 cup carrots, minced
  • 1 cup onion, minced
  • salt and pepper to taste
  • 2 cups breadcrumbs (american garden)
Steaming the Embutido
  1. Place the ground pork in a large container.
  2. Add the breadcrumbs then break the raw eggs and add it in. Mix well
  3. Put-in the carrots, bell pepper (red and green), onion, pickle relish, and cheddar cheese. Mix thoroughly
  4. Add the raisins, salt, and pepper then mix well.
  5. Place the meat mixture in an aluminum foil and flatten it.
  6. Put in the sliced hotdog on the middle of the flat meat mixture.
  7. Roll the aluminum foil into a tightly packed log about 1″ to 1.5″ in diameter, sealing on both ends. Repeat with the remaining pork mixture.
  8. Place in a steamer and let cook for 1 hour.
  9. Let it cool and slice into rings. Serve with your favorite catsup or sauces. Enjoy!
