PORK EMBUTIDO
It is a Filipino-style meatloaf. Embutido was developed by Filipinos to suit their own taste and liking into some form of meatloaf. You can either baked this or steam. I tried to steam using a foil and here's the recipe.

Ingredients
- 2 lbs. pork mince (available at spinneys supermarket)
- 1pack Tender Juicy hotdog, cut in half lengthwise
- ½ cup sweet pickle relish
- 3 raw eggs
- 2 cups cheddar cheese, grated
- 1 cup red bell pepper, minced
- 1 cup green bell pepper, minced
- 1½ cup raisins
- 1 cup carrots, minced
- 1 cup onion, minced
- salt and pepper to taste
- 2 cups breadcrumbs (american garden)
- Place the ground pork in a large container.
- Add the breadcrumbs then break the raw eggs and add it in. Mix well
- Put-in the carrots, bell pepper (red and green), onion, pickle relish, and cheddar cheese. Mix thoroughly
- Add the raisins, salt, and pepper then mix well.
- Place the meat mixture in an aluminum foil and flatten it.
- Put in the sliced hotdog on the middle of the flat meat mixture.
- Roll the aluminum foil into a tightly packed log about 1″ to 1.5″ in diameter, sealing on both ends. Repeat with the remaining pork mixture.
- Place in a steamer and let cook for 1 hour.
- Let it cool and slice into rings. Serve with your favorite catsup or sauces. Enjoy!
